Crawfish Étouffée

Need a go-to recipe for a potluck dinner or something for a large gathering? Well look no further.  This is a no-fail recipe. You may think I’m kidding about the no-fail, but I am not. Every time I make this recipe, I’ve done something different whether it be on purpose or accident & every time, it’s come out delicious.  If I can do it, so can you.

You will need:

1 lb crawfish tails

4 tbsp. butter

1 chopped onion

1 clove of minced garlic (1 clove =1 tsp)

1 can cream of celery soup

1 can cream of golden onion soup

1/2 cup chopped green onions

1.5 cups water

salt & pepper

1/2 tsp. Tony’s seasonings

How to make it:

Heat butter in large pot. Add onions & garlic & saute (cook until brown, constantly stirring). Add crawfish & 1 cup of water. Cover & cook on medium heat for 30 minutes. Add soups & 1/2 cup of water. Cook, uncovered, on low for 20 minutes, stirring occasionally. Add Tony’s seasonings, salt, & pepper. Cook for a few more minutes and serve over rice.
