Protein Pizza Muffin

To be straight-up honest, if you fix each meal exactly as the nutrition guide says, your food will not be very good. At least that’s what I’ve discovered. So here’s how I’ve revamped Meal 4: Protein Pizza Muffin.

Normally, this meal requires chicken, but I’m not a fan of chicken on pizza so I substituted pepperoni.

Prep: 5-8 minutes
Cook: 10 minutes
Total: 15 minutes

1 bag of 6 Whole wheat English muffins
1 can Tomato sauce
1 tbsp Oregano
1 tbsp Garlic powder
1 tbsp Onion powder
1 tbsp Basil
1 tbsp Parsley
1 1/2 tsp Salt (Sea salt)
1 1/2 tsp Pepper (Peppercorn)
1 tsp Sugar
1 bag Mozzarella cheese, shredded
1 bag Pepperoni slices
•Small pot or sauce pan
•Baking/cookie sheet
•Spoon & bread knife

••Preheat oven to 350••

1. Pour tomato sauce in the pot & turn the stove on a low setting.

2. Once the sauce is heated, add the seasonings. Stirring so it’s mixed well. Let it cook for about 30 seconds, stirring constantly. Taste & add seasonings to your liking.

3. Slice through the English muffins, cutting them into halves & laying them on the baking pan, middles facing up.

4. Cut off heat to the sauce & spoon onto each half of bread making sure to cover the entire surface.

5. Add the mozzarella cheese according to what you like.

6. Add pepperoni on top (I did three slices per half). Then sprinkle a little more cheese on top to keep the pepperoni in place.

7. Pop the baking sheet into the oven & set your timer for 10 minutes. Meal is ready once the timer goes off.

It looks like this when done.

Serving: 1 pizza muffin
Makes 12 servings

Per Serving
Fat: 10g
Protein: 14g
Carbs: 34g

The Insanity Nutrition Guide says to only eat 1 serving & to eat it with a cup of steamed broccoli, which is 313 calories total. However my revamped recipe isn’t up to par with the calories, so we each ate 2 servings. So add calories by drinking a cup of milk (preferably skim) with it. For 400 calories, eat a navel orange & for 500, eat fat-free pudding in addition to the orange.
